It is a small town and most people just stop of here for one evening before getting the bus onto Cusco. We decided to spend a day here so we didn´t have two full days on the bus. And I have to say so far so good. It is a nice town, quite small but has all the restaurants, bars etc of a bigger place. Found a great one last night, a pub on the main square “Garabato Pub – Club Social”, which not only has a fish tank with the sickest looking gold fish you have ever seen but a vast selection of animal skins pinned onto the wall, some of them cat sized. Oh yeah and three stuffed deer under the TV. All the bars here play music TV videos all the time, but so far they are always DVD’s of a music channel and are almost always made up of really badly recorded Peruvian music, Shakira, dull Spanish ballads and occationally some light relief with Queen or Abba (never thought I’d be happy to hear Dancing Queen played so much!). Oh and did I mention Shakira – she is everwhere, including a nice picture of her on the hotel room wall from her back in her red hair days. Had a wonder round today taking in the sights, which doesn’t take long. There is a great market here which makes me wish

Eggplant with Spicy Coconut Cream:

4 to 6 long green or purple eggplants
4 green onions (scallios)
1 or 2 small Guam peppers or similar
1/2 cup lemon juice
1 to 1 1/4 cup coconut milk
salt to taste

Procedure: Wash eggplants, poked with forks to allow heat to enter evenly through eggplant; grilled over a barbecue grill or on a flat griddle stovetop. When skin turns black and eggplant becomes soft, place in a bowl of cold water—about 5 minutes; once cool, peel skins carefully and place eggplants in another bowl. Take a fork and gently split eggplants lengthwise. Wash off green onions and chop finely; add to the eggplant. Repeat the same procedures with the peppers. Add lemon juice; the juice of fresh lemons is preferred. Add coconut milk—coconut milk from freshly grated coconuts is the best. Add salt to taste. Your taste buds will let you know if the lemon juice and coconut milk are not blended where you need to add a little of either to bring out that tangy and sweet delicacy of the coconut milk.

Beef with Coconut Milk:

3 tbsp extra virgin olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 pounds flank, round or sirloin steak cut into 1/2 –inch strips
3 tbsp of soy sauce
1 cup water
Juice of a lemon and a half
2 cups coconut milk
1 cup cherry tomatoes (red and green), cut in half
2 cups of string beans, cut in 2-inch lengths
1 cup fresh spinach, whole
salt and pepper to taste

Procedure: Add the extra virgin olive oil to deep skillet and turn stove on high. As the skillet heats, add garlic (do not brown) and onions; stir and cook about 2 minutes. Add the steak and a generous sprinkling of black pepper, stirring and cooking for 2 minutes. Add and mix vegetables with meat ingredients. Add soy sauce and lemon juice, stirring, adding water. Lower to medium heat; simmer for 4 minutes or when string beans are done but not overdone. Add salt, stir and then coconut milk.Turn on high and bring the liquid to boiling point—turn the heat down to low. Let it simmer for 3 minutes. Turn off heat. Eat with rice — the richness and texture of the coconut milk truly make this dish very tasty — mangge (delicious).

General Tsao Chicken Chinese Food Recipe – Sauce from Trader Joe’s On the west coast in Chinese restaurants General Tsao is unknown. We order Kung Pao Chicken. While shopping at Trader Joe’s I found this jar of General Tsao sauce. Since there are so many requests and lovers of General Tsao on the Chinese Food Fans on Facebook I decided to make this video. Very different than kung pao, sweet and doesn’t have the punch of the dried red peppers. Ingredients: 1 boneless chicken breast cut in 1 – 1/2 in. pieces 1 tablespoon cooking wine 1 teaspoon sugar 1 tablespoon corn starch 4 – 6 oz. General Tsao sauce from Trader Joe’s 1 tablespoon sliced ginger 4 cloves chopped garlic 1/4 cup peanuts chopped green onion dash of sesame oil Preparation: Marinate chicken cooking wine sugar and corn starch for 30 min. In hot wok add ginger, garlic to 2 tablespoons oil Stir in chicken When 75% done add 4-6 oz. sauce to taste Cook until done Add peanuts green onion and sesame oil
